It would be nice to see how many items are coming in per minute and how many items I'm consuming per minute so I can better plan my town.

Hi! This already exists in the game in the form of the trends panel. You can access it by clicking on the graph button in the top right corner of the HUD.
The trends panel allows you to select a resource and see what's happened to it over the last 30 minutes of gameplay (if it's increasing or decreasing in quantity). You can also check the details - what is producing it, what is eatign it up, etc. Simply click on any point on the graph to see a list of events/buildings (it also allows you to move to a specific building).
