I would like to be able to choose which resource nodes non-woodcutter camps should be prioritized for harvesting,

Hi! This is already possible in the game. Simply select a node, and you will see a numerical priority selector in its UI panel (like the one on construction sites). If you set a higher number, the gatherers will prioritize that node.
