Don’t know if this has been mentioned before, but I would love to see the stats of each mission after a win/loss. I would like to know how much rep was gained by what, how much I harvested, amount sold/traded, etc.

I like being able to reflect on successes / failures, and currently the game doesn't really support that. I'd love to be able to click on a settlement on the world map and see various details about the game that made it. For example; how much reputation did I get from what sources? What were my forest mysteries / cornerstones? How many glades did I open? etc.

I would even find a "Frostpunk" look really cool. In their game when you finish your game, it will show like a fast-forward-video of your settlement and you can see how it got developed further and further. That maybe hard to realise, but it would be a cool feature in addition to seeing the stats at the end of the run.

To add to this, I'd also like for an archive or similar where we can see statistics from past runs. Things like maybe a summary of lifetime statistics or even a "Hall of Fame" like in Civ where you can see all your past wins and losses and information on them.

I'd also like to see the time it took to complete the mission

Yes, that would definitely be nice. And currently selecting a previous settlement on the world map tells you only the settlement's name. A few stats like population by species, years taken, etc. would be nice too.
Give me charts and graphs!

Something that lets us see what we produced, which item was running a deficit, how many items actually needed to be produced would all be valuable things to know yet something too cumbersome to map "on paper".

Graphs please.
If difficulty is a concern, since knowing how much you are producing in a season vs how much you are consuming makes it infinitely easier to gauge your production rate and decide whether you need an extra food facility for the next batch of migrants or would rather focus on new production chains...
You can bar access to the analytics until after the game is over on higher difficulties. Impossible I'd say.
For a new player, access to this kind of tools would greatly help them learn how many facilities they need, how to balance their workers, build orders, etc. and greatly smooth the learning curve in that regard. It would generally increase the skill level of players as well.
And it's very satisfying looking at how you've done and comparing with other runs, benchmarks, etc.
You can look at Starcraft 2 for an example of a great implementation of gameplay analytics.
